A Sweet Day for KTI at Chocolatefest 2008
Kelly Ebling and Jane Kinkly, students in the Culinary Arts Specialist Program, share their experience at Chocolatefest 2008, held at the Hershey Lodge on Sunday, February 3, 2008.
Every year, Hershey hosts
the Chocolatefest, a celebration
of chocolate, which
is a fundraiser for Keystone
Human
Services.
Keystone
works
with
the
blind,
disabled, and mentally retarded,
so the money goes
to a very good cause.
This year KTI participated
in the festival. The amount
of
work
and
planning
that
went
into a
one
day
event was phenomenal. It
started with the choice of
menu items. While chocolate
was a requirement,
everything else was left
to the entrants. Chef
Stiffler and Chef King
collaborated and
decided that we
would prepare
Cherry Almond,
Chocolate Liquor,
and Chocolate
Walnut truffles as
well as Petits
Fours, Chocolate Dipped
Espresso Stuffed Cherries,
Chocolate Dipped Almond
Stuffed Figs, and a
Chocolate Fountain with
Pretzels, Strawberries,
or Pound Cake.
Preparations were frantic
and the Chefs were
tyrants. Everything had
to be perfect! We really
learned how to function
and excel under pressure!
Many hours were
spent making sure the
truffles were perfectly
proportioned and that
every morsel was a delight
to the senses. For
the first time that many of us
can remember, we were tired
of chocolate.
Creating the food was important,
but presentation
also took a lot of time. We
had to drizzle the chocolate
just right and add embellishments.
Finally the day arrived and
we loaded up tray after tray of our beautiful creations onto
the van and off we went to the
Chocolatefest! After setting
up and looking around, we realized
that we did have reason
to be proud and all our hard
work paid off. Ours was one of
the most appetizing booths
among all of those set up by
schools and hotels. Also, people
couldn’t get enough of our
truffles! We ended the day
happy, and satisfied, but very
tired.
Keystone Human Services is a family of human service agencies working together to serve the community. A Harrisburg-based 501(c)(3) nonprofit organization, Keystone provides a diverse array of community-based human services, including residential and psychiatric services for individuals with disabilities, family preservation and therapy services, autism support and a variety of services and assistance programs for children and families.
